Christmas salmon trout in champagne recipe details
Ingredients
5 small | salmon trout, cleaned and dried |
750 ml | Champagne, dry |
350 ml | cream |
20 | button mushrooms, halved |
5 stalk(s) | spring onion, finely sliced |
4 tbsp | parsley, chopped |
1 leaf | bayleaf |
1 pinch(es) | paprika powder |
30 g | butter |
some | salt and pepper to taste |
Instructions
Preheat oven to 180°C.Place touts side by side in a buttered casserole. Pour over 500ml of the champagne and add the cream, mushrooms, spring onions, parsley, bay leaf, paprika, salt and pepper. Cover with foil and bake for 15 minutes.
Remove the fish from the dish, remove the skin and place the fished in a warmed dish.
Strain the sauce into a pot, remove the bayleaf and scatter the mushrooms over the trouts. Keep warm.
Boil the sauce uncovered until reduced by half. Add the rest of the champagne, whisk in the butter and check the seasoning.
Pour the sauce over the fish and serve with potatoes.
