Ingredients
150 g | unsalted butter, softened |
3 tbsp | honey |
3 large | eggs, beaten |
180 g | self-raising flour |
For the Filling: | |
2 tbsp | strawberry jam, sugar-free |
whipped cream |
Instructions
Preheat oven to Gas Mark 4, 180°C, 350°F. Grease and flour an 8-inch, 20cm cake tin.Melt the butter and honey on a small pan over a low heat. Set aside.
Sieve flour into a large bowl. Add the butter mixture and mix together. Add the eggs and mix thoroughly.
Transfer to tin and bake for about 20 minutes until risen and a skewer inserted into the centre comes out clean.
Allow to cool in tin for 10 minutes and turn out onto a wire rack to cool.
When cold, cut into two equal rounds. Spread the jam over the bottom half and top with whipped cream. Return the top and chill slightly before serving.
