Ingredients
10 | potaotes, waxy variety, approx. 130-150g each |
1 tbsp | salt |
2 tbsp | caraway |
pepper | |
400 g | tomatoes |
1 | onion |
1 clove(s) | garlic |
30 g | butter |
1 tbsp | mixed herbs (rosemary, oregano, thyme) |
1 tbsp | parsley, chopped |
10 | black olives, pitted and sliced |
10 | green olives, pitted and sliced |
250 g | Cheddar cheese, grated |
For the Dip:(optional) | |
150 g | crème fraîche |
300 g | yoghurt |
2 tbsp | mixed herbs |
salt and pepper |
Instructions
Cook the potatoes in their jackets in salted water, add in the caraway. Cook for 25 minutes or until done. Chill with cold water and allow to cool slightly.Preheat the oven to 200°C.
Finely dice the tomatoes, onion and garlic. Heat the butter and sauté the vegetables for 3-5 minutes. Allow to boil down a bit, to get a thick tomato sauce.
Halve the potatoes lengthwise and scrape out ½ cm of each half with a spoon. Season with salt and pepper. Mash the scraped out, combine with the herbs and season with salt and pepper.
Combine the potato mash with the tomato sauce, the olives and half of the cheese. Spoon the filling heaped into the potatoes and sprinkle with the remaining cheese. Place the potatoes on a lined baking sheet and bake for approximately 25 minutes or until golden brown.
You may serve the potatoes with a dip of mixed crème fraîche, yoghurt and herbs, seasoned to taste with salt and pepper
