Stuffed Baked Potatoes with Ham and Cr me Fra che recipe

Ingredients
4 medium | potatoes, floury variety |
125 g | crème fraîche |
100 g | lean cooked ham, finely chopped |
1 small | onion, finely chopped |
1 pinch(es) | cayenne pepper |
salt | |
50 g | freshly grated Cheddar cheese |
Instructions
Wash and brush the potatoes, place onto a lined baking sheet and bake at 180°C for an hour. Take out of the oven and let cool slightly.In the meantime put the chopped onion into a glass bowl and microwave at 380W for 3 minutes.
Lengthwise halve the potatoes and scoop out some of the flesh, leaving a shell of at least 1cm.
Slightly mash the potato flesh with a fork and put into a bowl. Add crème fraîche, ham, the onions and a pinch of cayenne pepper and stir until well combined. Check seasoning, if the ham is very mild you may need some salt. Spoon the stuffing into the potato halves. Transfer into a greased baking dish, sprinkle with the cheese and bake at 200°C for 15-20 minutes.
Serve with fresh green salad.
