Ingredients
1 ½ kg | mussels |
85 ml | dry white wine |
85 ml | olive oil |
25 g | breadcrumbs |
3 tbsp | parsley, chopped |
1 tbsp | oregano, chopped |
2 clove(s) | garlic, minced |

salt and freshly ground black pepper | |
1 | lemon, quartered |
4 tbsp | lemon juice |
Instructions
Basic rule with mussels: when they are uncooked throw away any open mussels, when they are cooked throw away any that stay closed.Rinse and clean the mussels under the tap. Discard any open mussels.
In a large saucepan, combine the mussels and the wine. Cover and bring to a boil. Cook for 4-5 minutes until the mussels are open. Drain the mussels and collect the cooking liquid.
Remove and discard one shell half from each mussel. In a small bowl, mix together the breadcrumbs, 3 tablespoons of oil, the herbs and the garlic. Season with cayenne pepper, salt and pepper. Add some cooking liquid if the mixture is too thick.
Preheat the oven to 220°C or switch on the oven grill. Place the mussels side by side on a lined baking tray and divide the breadcrumb mixture on top of each. Sprinkle with the remaining oil. Bake or grill the mussels for 3-4 minutes until golden brown.
Sprinkle the mussels with lemon juice and serve with the lemon quarters and fresh white bread.
