Ingredients
8 | portabella mushrooms, stems removed |
150 g | bread crumbs |
100 ml | olive oil |
1 medium | red onion, diced |
2 clove(s) | garlic, minced |
2 tbsp | fresh parsley, chopped |
2 tbsp | fresh basil, chopped |
grated Cheddar cheese, optional, for topping |
Instructions
Preheat the oven to 180°C.Clean and prepare the mushrooms.
Chop the onion, mince the garlic and finely chop the fresh herbs.
Heat the olive oil in a sauté pan over medium heat and add the onions and garlic. Cook, whilst stirring so that the garlic does not burn.
Add the bread crumbs and stir to combine. Then add the fresh herbs and stir again to get a good mixture. You may need to add a little extra oil if you feel that the stuffing mixture gets too dry.
Fill each mushroom cap with an equal amount of the mixture.
Line a baking tray with baking paper. Place the mushrooms onto the tray, and bake them for 25 minutes. Then open the oven and sprinkle a few or all mushrooms with some cheese (optional). It does add a very nice flavour. Bake the mushrooms for additional 5-10 minutes, until the cheese has melted.
Remove the mushrooms from the oven when the stuffing begins to turn a golden brown color.
Serve at room temperature.
