Ingredients

500 g small potatoes
1  onion
1 tbsp mustard
100 ml vegetable stock
50 ml white balsamic vinegar
80 ml extra virgin olive oil
15  black olives, pitted and sliced
1 bunch(es) rocket, roughly chopped
5  sun-dried tomatoes in oil, chopped
2 stalk(s) spring onions, sliced
10  cherry tomatoes, halved
1 clove(s) garlic
salt and pepper

Instructions

Cook the potatoes until soft. Allow to cool a bit, then peel the potatoes. Rub the inside of a bowl with the halved garlic clove. Slice the potatoes and place into the bowl. Add olives and sun-dried tomatoes.

Chop the onion. In a saucepan, heat the stock with onion, pepper and mustard. Add to the salad, together with vinegar, toss gently and allow to soak for 10 minutes.

Add the oil, spring onions and the tomatoes and toss until all is well combined. Season to taste with salt and pepper and serve.
