|3 tbsp||sun-dried tomatoes in oil, chopped|
|3 tbsp||basil pesto|
|salt and freshly ground black pepper|
Cut a pocket into each fillet. Mix together the pesto and the tomatoes. Stuff the fillets with the mixture and seal with toothpicks. Season with salt and pepper.
In a large pan heat the butter and fry the chicken breast fillets on both sides over medium heat until golden all around and cooked through.
