- Ingredients:
- Eight 1-inch thick slices of French bread or Texas toast
- 4 ounces cream cheese, softened
- 4 ounces strawberry (or your favorite) preserves (raspberry, blackberry, peach, apricot, etc.)
- 6 large eggs, lightly beaten
- 1-1/2 cups milk
- 1/3 cup maple syrup
- 2 teaspoons cinnamon
- 2 teaspoons vanilla extract
Spread 4 slices of bread with cream cheese and 4 slices with preserves. (This works best when cream cheese is softened and bread is slightly frozen.) Put slices together to make 4 sandwiches. Place 4 sandwiches in a pan just large enough to hold them in a single layer. Whisk together eggs, milk, maple syrup, cinnamon, and vanilla, and then pour over top of sandwiches while turning each sandwich over several times to coat them well. Cover pan and refrigerate overnight.
In the morning, turn sandwiches one more time to soak up liquid. Preheat oven to 375 degrees. Carefully lay sandwiches on greased baking pan and bake for 10 to 15 minutes. Turn sandwiches over with spatula and bake an additional 10 minutes. Remove from oven and slice on the diagonal. Sprinkle with cinnamon and powdered sugar. Serve with fresh berries, crisp bacon, and maple syrup on the side.
