Mushrooms a la greque recipe details
Ingredients
500 g | button mushrooms, chopped |
1 large | Spanish onion, chopped |
3 clove(s) | garlic, finely sliced |
2 glass(es) | dry white wine (or you can use red) |
90 ml | extra virgin olive oil |
2 tbsp | parsley, chopped |
1 tbsp | thyme leaves separated from the stalk |
½ | lemon, juiced |
salt and pepper, to taste |
Instructions
Finely chop the Spanish onion and the garlic. Slice the mushrooms finely. Fry the onions and garlic in 30 ml of the olive oil until softened, then add the sliced mushrooms and herbs, with more oil and stir-fry until cooked. Remove the vegetables.Deglaze the pan with the white wine and then keep at a rolling boil until reduced by a half. Allow to cool.
Beat the remaining oil with the lemon juice, with a little salt and black pepper and mix with the cooled reduced liquid.
Stir in the vegetables and serve immediately with crusty French bread, butter and a bottle of Muscadet-sur-lie, or refrigerate and serve cold the same way.
Some grated lemon peel can be added.
Some cooks add 1/2lb peeled and seeded tomatoes with the mushrooms and cook in the wine, omitting the lemon juice.
