Ingredients
500 g | flour, all purpose |
2 ½ tsp | active dry yeast, or 1 Package |
75 g | sugar |
1 tsp | vanilla |
1 pinch(es) | salt |
250 ml | milk |
75 g | butter or margarine, dissolved |
For the topping: | |
1 kg | fruit, (optional) |
pudding, cooked with 500 ml milk, (optional) | |
For the Streusels: | |
300 g | flour, all purpose |
150 g | sugar |
½ tsp | vanilla |
175 g | butter |
Instructions
Mix yeast and flour in a big bowl. Add sugar and salt. Heat dissolved margarine and milk up to about 35°C. Add vanilla.Form a well in the centre of the flour. Add the liquid ingredients and knead well until the dough is tough and elastic. It should not stick to the bowl any more. Now cover with a towel and let stand until dough has doubled in size.
As fruit topping you may use apples, pears, raspberries, rhubarb, blueberries, cherries, currants, plums, peaches, apricots, mirabelles, etc. Clean the fruit and slice if necessary, you may want to peel apples and pears.
If required you can cook a pudding with 500 ml of milk. Vanilla pudding goes well with the cake.
To make the streusels, mix flour, butter, vanilla and sugar. Knead well until the dough becomes crumbly. Make streusels using your hands.
Preheat the oven to 200°C.
Knead the dough again. Then grease a big baking sheet (I use 30x40cm = 12x16inch). Roll out the dough on the baking sheet. Then spread the pudding on the dough and arrange the fruit on top. You can cover the whole top with fruit. Sprinkle the streusels on top. Watch out that you do not forget the edges.
Bake for 15-20 minutes without fruit or for 25-30 minutes with fruit. The streusels should be golden brown.
You can leave out the pudding or the fruit or both. We normally leave out the pudding when using fruit, but with berries the combination of both tastes great!
The streusels can also be varied in different ways: Add ground or chopped nuts, chocolate chips, baking cocoa or cinnamon and you will have a delicious variation of an old-style family recipe!
