- Ingredients
- 1 egg
- 1 cup milk
- 1/2 Tablespoon almond extract
- 3 cups sifted flour
- 1 Tablespoon baking powder
- 1/2 teaspoon salt
- 1/2 cup sugar
- 4 ounces butter
- Topping:
- 1/2 cup sliced almonds
- 1/4 cup sugar
- 3 Tablespoons flour
- 3 Tablespoons butter
- Ingredients – Custard Filling
- 1 cup light cream or milk
- 2 egg yolks
- 1 Tablespoon sugar
- 2 teaspoons cornstarch
- 1 Tablespoon vanilla sugar
Preheat oven to 400 degrees. Butter a 10-inch cake pan. In small bowl, beat together the egg, milk, and almond extract. In a large mixing bowl, combine the flour, baking powder, salt, and sugar. Rub the butter into the dry ingredients. When crumbly, add the milk mixture and stir quickly just until dry ingredients are moistened. Turn into pan. Stir the ingredients together for the topping and spread on top. Bake about 20 minutes.
Option:Split the cake in two layers using dental floss or thread in sawing motion. Spread with custard filling (recipe below). Any fresh fruit can be added to top of custard.
In saucepan, combine the cream, egg yolks, sugar, and cornstarch. Bring to a simmer, stirring constantly until thickened. Let cool (covered) and stir in vanilla.
