- Ingredients
- 1-1/2 cups all-purpose flour
- 2 teaspoons baking powder
- 1/4 teaspoon salt
- 1/2 cup sugar
- 1 large egg, beaten
- 1/2 cup milk
- 1/2 cup butter or margarine, melted
- 1-1/4 teaspoon almond extract
- 1 cup sliced fresh strawberries
- Streusel Topping
- 1/2 cup sugar
- 1/2 cup chopped pecans
- 1/4 cup all-purpose flour
- 2 Tablespoons butter or margarine, melted
- 1/8 teaspoon almond extract
Combine flour, baking powder, salt, and sugar; make a well in the center of mixture. Combine egg, milk, butter, and almond extract; add to dry ingredients, stirring until moistened. Fold in strawberries. Spoon batter into greased jumbo muffin tins, filling 3/4 full. Combine streusel ingredients in a small bowl; stir well. Sprinkle in streusel topping evenly over batter.
Bake at 350 degrees for 20 to 25 minutes. Cool in pan on a wire rack for 10 minutes. Remove from pan, and let cool completely on wire rack.
Yield:6 jumbo muffins
