- Ingredients:
- 1-1/2 cups chopped fresh strawberries
- 3/4 cup sugar
- 1 cup white flour
- 3/4 cup wheat flour
- 1/2 teaspoon baking soda
- 1/2 teaspoon nutmeg
- 1/4 teaspoon salt
- 1/4 cup melted butter
- 2 eggs
- 1 teaspoon almond extract
- 1/3 cup apple or orange juice
- 1/4 cup of sugar for topping
Preheat oven to 375 degrees. Line 12-cup muffin tin with papers; spray with non-stick cooking spray. Combine sliced/chopped fresh strawberries with 1/2 cup sugar and apple or orange juice. Marinate about 30 minutes, then drain and reserve liquid. Set aside berries. Sift together dry ingredients (flours, baking soda, nutmeg and salt); set aside.
Combine melted butter, 1/4 cup sugar, eggs, almond extract and reserved strawberry juice. Beat together until blended. Stir wet mixture into flour mixture, just until moistened. Fold in reserved marinated berries. Fill muffin cups to the top; sprinkle with any amount of sugar desired. Bake for 20 to 25 minutes until toothpick inserted comes out clean. Cool on rack out of pan.
