Ingredients
4 tbsp | dry sherry |
2 tbsp | soy sauce |
450 g | firm white fish fillets such as cod, monkfish, red snapper cut into strips 5cm long by 2 1/2cm wide |
60 ml | tomato or bottled chilli sauce |
1 tsp | red pepper flakes |
2 tsp | sugar |
½ tsp | salt |
2 tbsp | peeled and miced fresh ginger |
1 tbsp | minced garlic |
3 | sliced scallions, includig tender green tops |
3 tbsp | peanut oil or vegetable oil |
Instructions
Organise all of your ingredients in little bowls before you start to cook.In a shallow glass container, stir together 2 tablespoons of the sherry and one tablespoon of the soy sauce. Add the fish strips and toss to coat evenly. Marinate, uncovered for about 30 minutes at room temperature.
In a small bowl, stir together the tomato or chilli sauce and red pepper flakes; set aside.
In another small bowl, stir together the remaining 2 tablespoons sherry and 1 tablespoon soy sauce, the sugar and salt; set aside.
In yet another bowl, stir together the ginger, garlic and scallions; set aside.
In a large sauté pan or wok over high heat, warm the oil. Add the fish strips and ginger-garlic mixture and toss rapidly for 2 minutes. Add the sherry-sugar mixture and continue to toss rapidly for 1 minute. Add the tomato sauce mixture and toss for 1 more minute.
Transfer to a warmed platter and serve immediately. Accompany with steamed white rice and broccoli, snow peas or bok choy.
