Ingredients
Serves: 3- 2 medium tomatoes, chopped
- 1 1/2 teaspoons chopped red onion
- 1 1/2 teaspoons chopped green bell pepper
- 1 1/2 teaspoons chopped red bell pepper
- 1 1/2 teaspoons chopped yellow bell pepper
- 1 teaspoon chopped seeded jalapeno pepper
- 1 1/2 teaspoon lime juice
- 1 teaspoon minced fresh cilantro
- 1 small garlic clove, minced
- 1/8 teaspoon dried oregano
- 1 tablespoon butter, divided
- 6 eggs
- 1/4 cup 2-percent milk
- Salt and pepper, to taste
- 1 cup shredded Cheddar cheese
Preparation method
Prep: 10 mins | Cook: 20 mins1. Make a quick salsa: in a mixing bowl, stir together the tomatoes, onion, peppers, lime juice, cilantro, garlic, and oregano.
2. In a separate bowl, beat eggs, milk, salt, and pepper together.
3. Melt 1 teaspoon butter in a small skillet over medium heat. Pour a third of the egg mixture into the hot skillet and cook without stirring, lifting up edges as they set to allow uncooked egg mixture to run underneath.
4. When egg has set, arrange a third of the salsa and cheese on half of the egg circle. Fold the other half over the top. Keep warm while you cook the remaining two omelets’ worth of ingredients.Tip
Make the salsa a day or two ahead of time to bring out the most flavor.
