Ingredients
75 g | sultanas |
1 tsp | smoked paprika |
4 tbsp | virtually fat-free yoghurt |
1 bunch(es) | mint, chopped |
1 clove(s) | garlic, crushed |
1 | red chilli |
salt & freshly ground black pepper | |
1 tbsp | water |
200 g | couscous |
1 medium | head of cauliflower |
125 g | green beans, trimmed |
4 | carrots, chopped |
125 g | baby sweet corn |
1 | courgette, chopped |
½ small | red cabbage, shredded |
Instructions
Place the sultanas and smoked paprika in a small bowl, cover with boiling water and leave to sit for 10 minutes.Mix together the yoghurt, mint, garlic, chilli, pepper and water. Add the couscous to the steeped sultanas and cover with boiling water, leave to sit for 5 minutes.
Prepare a steamer, break cauliflower into florets, add the beans, carrots, sweet corn, courgette & cabbage and steam for 5-6 minutes.
Mix the couscous well with a fork and serve topped with the steamed vegetables and the yoghurt sauce.
