steamed pumpkin cake details
INGREDIENTS:40g dried shrimp, soaked and chopped
2 nos. Chinese sausages
5 cloves garlic, chopped
6 shallots, chopped
480g pumpkin flesh, shredded
4 tbsp oil, for frying
Batter:
250g rice flour
50g tapioca flour
800ml water
Seasoning:
1 tsp salt
Dash of pepper
METHOD:
- To prepare batter, blend rice flour and tapioca flour in a mixing bowl. Add water and stir well.
- Prepare all ingredients. Heat up oil in a pan/wok. Fry chopped garlic and shallots until fragrant.
- Add dried shrimp and sausages. Continue to fry until fragrant. Then, add in shredded pumpkin and fry until pumpkin softens.
- Gradually stir the batter prepared in Step 1 into the fried ingredients. Season with salt and pepper. Cook until batter thickens.
- Place the thick batter into a lightly greased 8″ square pan. Steam at high fire for 45 minutes.
- Remove from steamer. Leave to cool completely before start slicing.
