Ingredients
Serves: 3- 3 – 6 oz pieces of steak
- 1 tbsp olive oil
- 1/4 cup white wine
- 2 tbsp diced shallots
- 1/2 cup demi glaze
- 1 pinch tarragon
- 3 tbsp tomatoes seeded peeled and small diced
- 2 tbsp diced mushrooms
- salt and pepper to taste
Preparation method
Prep: 10 mins | Cook: 20 mins1. Preheat oven to 300 degrees F (150 degrees C). In cast iron skillet sear steaks 1 1/2 to 2 minutes on both sides in olive oil.
2. Finish in oven at 300 degrees for 15 min, roughly medium rare.
3. Deglaze pan with white wine, then add shallots. Reduce wine until scant.
4. Add demi glaze and tarragon. Add tomatoes and mushrooms at last minute to maintain shape.
5. Plate steaks and cover with sauce.
