star anise ice cream recipe details
Ingredients
500 ml | full cream milk |
500 ml | double cream |
125 g | sugar |
40 g | star anise, available at speciality food shops markets etc |
8 large | eggs, yolks only |
2 tbsp | Pernod, optional |
Instructions
Place the milk, cream, sugar and star anise into a large saucepan and bring to a boil. Remove from heat.Whisk the egg yolks in a bowl until light in colour and then pour in the cream mixture, while whisking. Pour the mixture back into the pan and cook over a medium heat until it thickens sufficiently to coat the back of a spoon. Strain through a fine mesh sieve into a clean bowl and set aside, covered, to cool completely.
If you wish to add the Pernod, stir it in now.
Freeze mixture in an ice cream maker according to manufacturers’ instructions. The Pernod may prevent the mixture becoming very hard if stored in a freezer-proof container.
About this recipe: this came to me via an Asian colleague some years ago. The Pernod suggestion came from another colleague with French-Swiss connections.
