Ingredients
1 pound soft goat cheese
1-1/2 pounds butter, softened
4 cups sugar
2 pinches of salt
1 Tablespoon lemon zest
1 Tablespoon vanilla extract
1 teaspoon vanilla extract
12 eggs
6 cups flour
Instructions:

Butter and flour two 10-inch tube pans. In a large bowl, blend cheese and butter. With mixer on high speed, beat sugar, salt, and lemon zest into above mixture until light. Add eggs one at a time, beating until very light and fluffy. Add vanilla. With mixer on low speed, add flour, blending until just mixed. Turn into pans.

Bake at 325 degrees for 1 hour and 15 minutes. Test with a cake tester or toothpick. Cool 5 minutes. Invert on rack to cool. May be served with a strawberry, Grand Marnier glaze, and whipped cream or raspberry sauce.

Makes: 2 cakes
