Ingredients
2 tbsp | olive oil |
2 clove(s) | garlic, minced |
1 medium | onion, chopped |
2 | zucchini |
1 bunch(es) | asparagus |
80 ml | vegetable stock |
100 g | small peas |
2 | plum tomatoes, chopped |
Instructions
Heat olive oil in a frying pan over medium heat, add garlic, onion and zucchini and sauté until soft, about 3 minutes. Add peas, tomatoes, asparagus and stock and cook until asparagus is tender.Remove from heat and leave to cool a little. Process in blender until smooth. Return to pan and heat through.
Serve over pasta or rice.
