This dressing will add a special taste to your
- Ingredients – Salad
- 6 cups fresh spinach leaves, stems removed
- 1/2 medium red onion, sliced very thinly
- 8 mushrooms, thinly sliced (wild morels, found at your local market, would be great)
- 1/4 cup toasted hazelnuts, pecans, or pine nuts for garnish
- 1/4 cup crumbled gorgonzola cheese or Oregon Blue for garnish
- Ingredients – Brandy Brown Sugar Dressing
- 1 Tablespoon brandy
- 3 Tablespoons brown sugar
- 1-1/2 Tablespoons molasses
- 1/4 cup balsamic vinegar
- 1 to 2 teaspoons Dijon mustard
- 3/4 cup canola oil
- 1/4 cup olive oil
- Salt and pepper to taste
Tear spinach leaves into bite-sized pieces and toss with remaining salad ingredients. Blend dressing ingredients. Drizzle 1/2 cup dressing over salad.
Serves: 4
