Ingredients – Salad
6 cups fresh spinach leaves, stems removed
1/2 medium red onion, sliced very thinly
8 mushrooms, thinly sliced (wild morels, found at your local market, would be great)
1/4 cup toasted hazelnuts, pecans, or pine nuts for garnish
1/4 cup crumbled gorgonzola cheese or Oregon Blue for garnish
Ingredients – Brandy Brown Sugar Dressing
1 Tablespoon brandy
3 Tablespoons brown sugar
1-1/2 Tablespoons molasses
1/4 cup balsamic vinegar
1 to 2 teaspoons Dijon mustard
3/4 cup canola oil
1/4 cup olive oil
Salt and pepper to taste

Tear spinach leaves into bite-sized pieces and toss with remaining salad ingredients. Blend dressing ingredients. Drizzle 1/2 cup dressing over salad.
