Ingredients
50 g | pine nuts |
1 | ripe tomato |
2 handful | fresh spinach leaves, approx. 50g |
3 clove(s) | garlic |
100 g | freshly grated Parmesan cheese |
1 cup(s) | extra virgin olive oil or rapeseed oil |
sea salt and pepper | |
1 handful | black olives |
Instructions
Slightly roast the pine nuts in a dry skillet. Wash and seed the tomato and cut in thin stripes. Set aside.Wash and spin-dry the spinach. Peel the garlic.
Finely chop the spinach, the pine nuts and the garlic and transfer into a blender. Add the Parmesan cheese and ½ cup of oil. Process and add more oil if necessary. Season to taste with salt and pepper.
Serve the pesto garnished with the tomatoes and olives with pasta of your choice.
