Ingredients
basic muffin dough | |
300 g | fresh spinach leaves |
200 g | cottage cheese, crumbled |
1 medium | onion, chopped |
Instructions
Preheat oven to 180°C. Spray muffin tin with cooking spray.Prepare basic muffin dough. Cook spinach leaves in lightly salted water until soft. Drain well and cut into small pieces.
Add spinach, cottage cheese and onion to the muffin mix and stir until mixed. Fill muffin tins 3/4 full and bake for 15-20 minutes or until lightly browned.
Leave muffins in pan for 10-15 minutes before removing.
