Ingredients
Serves: 4- 2 cups long-grain rice
- 3/4 cup baby spinach leaves, rinsed
- 5 tablespoons roughly chopped fresh flat-leaf parsley
- 5 tablespoons roughly chopped fresh cilantro
- 2 green onions, roughly chopped
- 1 clove garlic, minced
- 1/2 cup water
- 1/4 cup peanut or safflower oil
- 3 cups chicken stock
- 1/4 teaspoon salt
- 2 long green chiles, finely sliced
Preparation method
Prep: 10 mins | Cook: 25 mins | Extra time: 30 mins, marinating1. Soak rice in boiling water for 10 minutes. Drain. Meanwhile, place wet spinach leaves in a saucepan over medium heat and cook for about 2 minutes to wilt.
2. While rice is soaking, pulse together the spinach, parsley, cilantro, onions, garlic, and water in a food processor for about 30 seconds.
3. Heat oil in skillet over medium heat. Add rice and cook, stirring, for about 3 minutes to toast the grains. Then stir in the chicken stock and the spinach parsley mixture.
4. Continue to cook the rice for another 15 minutes over medium heat until grains are cooked through and al dente. Combine with the sliced green chiles.
