- Custard mix:
- 6 eggs
- 3 cups milk
- nutmeg, white pepper, and salt to taste
- One 14-ounce can of artichoke hearts chopped in small pieces
- 1 cup spinach, finely chopped
- 1 cup Parmesan cheese, freshly grated
- 2 pre-baked 8-inch pie shells
To make the custard, mix the ingredients together. Place spinach, artichoke hearts, and cheese into pie shells. Add the custard mixture. Place in a 375-degree oven and bake 45 minutes to one hour until the custard is set and a toothpick inserted comes out clean.
Note: If using processed Parmesan cheese, use less salt in the custard mix. If using frozen spinach, squeeze out water after defrosting.
