Ingredients
4 large | eggs |
50 g | Parmesan cheese, grated |
200 g | ricotta cheese |
200 g | spinach |
some | Italian herbs |
1 tsp | salt |
some | olive oil |
Instructions
In a large bowl, beat together the eggs, Parmesan cheese, herbs, and salt.Cook spinach until soft. Drain and cut into small pieces. Add spinach and ricotta to the egg mixture and stir well.
Heat some oil in a large pan and pour the mixture into the pan. Cover and cook for about 2 minutes. When the mixture has cooked and hardened a bit, cover pan with a large plate and flip over to cook from the other side. Cook until set.
