Ingredients
500 g | fresh spinach, stems removed |
2 medium | eggs, hard-boiled |
5 slice(s) | bacon |
red wine vinegar | |
150 ml | olive oil |
2 tbsp | Dijon mustard |
Instructions
Salad:Hard boil the eggs and remove yolks from whites. Chop whites coarsely and set aside.
Fry bacon, set fried bacon aside and reserve the grease. Heat bacon grease and add red wine vinegar. Add chopped whites. Stir.
Arrange spinach on serving plates, cut up bacon and place on top.
Dressing:
For the dressing combine egg yolks, olive oil and Dijon mustard. Whisk with a spoon. Pour over salad.
