Ingredients

For the pastry shell:
150 g flour
100 g ice cold butter, cut into small cubes
2 tbsp cold water
For the Filling:
2 tbsp olive oil
1 small onion
2 clove(s) garlic
450 g cooked (or thawed) spinach, wrung dry
2  tins of anchovy fillets
2 deciliter(s) double cream
3 medium eggs
pepper

Instructions

Preheat oven to 190°C.

Pastry shell:
Blend together flour and butter, then quickly knead the dough together with the water, roll out and line a 22 cm tart-form. Cover and place in fridge for an hour.

Cover pastry shell with baking paper. Fill with baking beans and bake for 15 minutes, take out the beans and paper, prick the pastry shell with fork, bake for another 5 minutes.

Filling:
Chop onion and garlic, fry slightly in olive oil. Chop spinach, not too finely, and add to the garlic and onion. Chop one tin of anchovies, whisk together with eggs and cream, add to the spinach. Season with pepper. Pour into the pastry shell, top with remaining anchovies, and bake for 20 minutes.
