Ingredients
Serves: 4- 1 dried Ancho chili
- 1/2 cup vegetable oil
- 3 onions, chopped
- 3 garlic cloves, minced
- 1 tablespoon tomato paste
- 1 cup cider vinegar
- 1 1/2 cups tomato sauce
- 1/3 cup Worcestershire sauce
- 1/2 cup brown sugar
- 3 tablespoons mustard
Preparation method
Prep: 5 mins | Cook: 30 mins | Extra time: 30 mins, soaking1. Bring a kettle of water to boil. Pour about 1 cup into a small bowl and submerge the Ancho chili. Let it soak for about 30 minutes to soften. After soaking, remove from water and mince.
2. Pour about 3 tablespoons of the oil into a saucepan and place over medium heat. When the oil is hot, add the onions and garlic and stir, cooking, until onions are softened, about 5 minutes. Add the Ancho chili.
3. Next, add the tomato paste and pour in the vinegar. Keep everything on medium heat and let it all meld together for about 4 minutes.
4. Into the skillet, dump the tomato sauce, Worcestershire, sugar, and mustard and stir everything to combine. Drizzle the remaining oil over everything and stir again. Cook over medium-low heat for about 20 minutes, until the texture smooths out and the sauce gets thicker.For a smoother sauce
If you want it even smoother, you can run the sauce through a food processor at this point, but it’s optional. Your sauce is finished!
