A quick appetizer, thanks to the zapping power of your microwave. Basically this is a nacho meat mix nested in zucchini instead of dumped on chips.

Ingredients
Serves: 4- 4 zucchini, cut in half lengthwise
- 1 pound ground beef
- 3/4 cup salsa
- 1/4 cup dry bread crumbs
- 1/4 cup minced fresh cilantro
- 1 teaspoon chili powder
- 1/2 teaspoon ground cumin
- 1/4 teaspoon salt
- 1/8 teaspoon pepper
- 1 cup shredded Monterey Jack cheese
Preparation method
Prep: 10 mins | Cook: 15 mins1. Use a spoon to carve out the pulp from each zucchini half, creating a boat shape. Arrange in a microwavable 8×8-inch baking dish, cover with plastic wrap, and microwave on High for 3 minutes until boats are tender but hold their shape. Pour off excess liquid.
2. Cook ground beef in a skillet over medium heat until no longer pink. Pour off excess liquid, then stir in remaining ingredients, reserving 1/2 cup cheese.
3. Stuff boats with mixture. Microwave for 4 minutes on High, then cover boats with 1/2 cup cheese and microwave for 3 1/2 more minutes.
Serve.
