Cumin-flavored ground pork is spiked with some minced jalapeno pepper, and used to fill these crispy quesadillas. Be sure to serve them with some sour cream, salsa, and guacamole.

Ingredients
Serves: 8- 2 teaspoons vegetable oil, plus more as needed
- 1/2 pound lean ground pork
- 1/4 cup minced onion
- 1 clove garlic, minced
- 1/4 teaspoon ground cumin
- 1/4 teaspoon dried oregano
- 1/2 jalapeno chile, minced
- 4 (10 inch) flour tortillas
- 1/2 cup pepper jack cheese
- 1/4 cup chopped fresh cilantro
Preparation method
Prep: 10 mins | Cook: 20 mins1. Heat 2 teaspoons of oil in a large skillet over high heat. Stir in the pork, and cook for 1 minute, stirring to break up. Add the garlic, onion, cumin, and oregano. Continue cooking until the pork is lightly browned, no longer pink, and the onion is tender, about 3 minutes more. Transfer the pork to a bowl and stir in the jalapeno. Clean the skillet.
2. Reheat the skillet over medium heat. Place a tortilla into the skillet, and sprinkle with half of the pork mixture. Sprinkle with half of the cheese and half of the cilantro, and press another tortilla on top. Cook until the bottom tortilla is browned, about 3 minutes. Flip over and cook 3 minutes more to brown the other side. Repeat to make the second quesadilla.
3. Cut the quesadillas into 6 to 8 wedges to serve.
