Ingredients
1 large | red cabbage, shredded |
125 g | fine salt |
1 l | white wine vinegar |
1 tbsp | coriander seeds |
1 tbsp | peppercorns, crushed |
1 tbsp | chili flakes |
1 tbsp | ground ginger |
1 tbsp | juniper berries, crushed |
3 | bay leaves |
1 tbsp | mustard seed |
Instructions
Layer the cabbage with the salt in a large colander. Allow to soak at a cold place overnight.In a saucepan combine the vinegar and the spices. Bring to a boil. Reduce the heat and simmer for 10 minutes. Allow to cool completely.
Rinse the cabbage under cold water. Drain well and transfer the cabbage into sterilized glasses. Press down gently. Strain the vinegar into the glasses up to the rim. Seal with screw caps and refrigerate for one week before serving.
Can be stored up to 10 weeks.
