Ingredients
Serves: 12- 2 cups boiling water
- 1 1/2 cup oatmeal uncooked
- 3/4 cups butter
- 1 cup sugar
- 2 cups firm packed brown sugar
- 1 1/2 teaspoon vanilla
- 3 eggs
- 2 1/4 cups sifted flour
- 1 teaspoon baking soda
- 1 teaspoon salt
- 1 1/4 teaspoon cinnamon
- 1/2 teaspoon nutmeg
- frosting:
- 1/3 cup butter
- 3/4 cups packed brown sugar
- 1/3 cup light cream
- 1 1/3 cup shredded coconut
Preparation method
Prep: 20 mins | Cook: 1 hour1. Pour boiling water over oatmeal, cover, and let stand 20 min.
2. Beat butter until creamy. Beat in sugars, vanilla & eggs. Add oatmeal mixture and mix well.
3. Sift together flour, soda, salt, cinnamon and nutmeg. Add to oatmeal mixture, mixing well. Pour into well-greased & floured 13×9-inch cake pan.
4. Bake 350 F 45-50 min. Don’t remove from pan.

6. Combine above frosting ingredients. Spread over cake while still hot. Broil until bubbly. Serve warm or cold.
