Ingredients
Serves: 6- 4 cups chicken stock
- 3 ancho chiles, stemmed and seeded
- 1 tablespoon vegetable oil
- 4 slices bacon, chopped
- 2 pounds ground chicken
- 1 large yellow onion, finely chopped
- 4 cloves garlic, finely chopped
- Salt and pepper
- 2 tablespoons tomato paste
- 1 (14 1/2 ounce) can diced roasted tomatoes
- 2 tablespoons unsweetened cocoa powder
- 2 tablespoons chili powder
- 1 tablespoon ground coriander
- 1/2 teaspoon ground cinnamon
- For serving: shredded cheese, sour cream, chopped red onion, and cilantro
Preparation method
Prep: 15 mins | Cook: 25 mins1. Pour chicken stock into a saucepan and add the ancho chiles. Bring to a boil over medium heat, then reduce heat to low and simmer for 10 minutes. Remove from heat and run the stock and ancho peppers through a blender to puree.
2. In a large soup pot, heat oil over medium heat. Add bacon to hot oil and cook for about 3 minutes, then add chicken and cook while stirring for about 8 minutes until browned.
3. Reduce heat to medium-low and add onion and garlic. Cook for about 5 minutes, then add pepper and tomato paste. Combine with ancho chile mixture.
4. Add remaining ingredients and simmer for 5 minutes. Then serve with cheese, sour cream, etc.
