Ingredients
2 tbsp | grapeseed oil |
1 | onion, chopped |
2 clove(s) | garlic, crushed |
2 ½ | cm fresh root ginger, finely chopped/grated |
1 tsp | garam masala |
1 tsp | chilli powder |
3 tbsp | medium curry paste, see database |
1 tbsp | tomato puree |
500 g | lean minced beef |
1 tsp | salt |
150 ml | vegetable stock |
2 tbsp | fresh coriander, chopped |
Instructions
Heat oil in a non-stick pan, add onion, ginger and garlic and fry over low-medium heat for 5 minutes, stirring frequently.Reduce heat to low and add garam masala and chilli powder and fry, stirring for 2 minutes.
Stir in curry paste and tomato puree, then beef and salt and mix well so beef is well coated in spices. Cook for 5 minutes, stirring frequently.
Stir in vegetable stock and simmer for 5 minutes, then stir in coriander and serve with baked potatoes.
