Spicy Mediterranean Zucchini Salad with Feta Cheese recipe

Ingredients
3 | chili peppers, red, green and yellow |
2 medium | zucchini |
1 | shallot |
3 tbsp | olive oil |
salt and pepper | |
2 tbsp | pomegranate syrup (Nar eksisi) |
1 bunch(es) | thyme, chopped |
10 | olives, pitted and finely cut |
100 g | Feta cheese |
Instructions
Wash, seed and dice the chili peppers. Wash and dice the zucchini. Peel and finely dice the shallot.
In a skillet sauté the vegetables in oil. Season to taste with salt and pepper. Cook until done, but still a bit firm to the bite.
Strain in a sieve and collect the juice. Mix the juice with the pomegranate syrup and the thyme. Check seasoning, if necessary add some salt and pepper.
Pour the dressing over the vegetables, add the olives and toss. Crumble the Feta cheese and sprinkle over the salad. Serve immediately.
