Ingredients
Serves: 4- 4 cloves garlic, crushed
- 3 onions, sliced
- 1 (1-inch) piece ginger, grated
- 2 tablespoons lime juice
- 1 pound 2 ounces ground beef
- Black pepper
- 1 tablespoon vegetable oil
- 3 red bell peppers, deseeded and sliced lengthwise
- 1 (14 ounce) can chopped tomatoes
- 1 teaspoon cumin seeds, crushed
- 4 tablespoons water
- 1/2 jalapeno chile, finely chopped
Preparation method
Prep: 15 mins | Cook: 30 mins | Extra time: 30 mins, chilling1. In a food processor, pulse 2 cloves garlic, 1 sliced onion, ginger root, and lime juice until smooth. Gently mix with ground beef and season with black pepper. Cover and refrigerate for 30 minutes.
2. While beef is chilling, pour vegetable oil into a large, deep skillet and place over medium heat. Cook remaining onions, red bell peppers, and remaining garlic in hot oil for about 10 minutes, then stir in tomatoes, cumin, and water. Simmer covered on low heat for 10 minutes.
3. Form beef mixture into 24 meatballs, each one inch across. Nestle into the simmering sauce, cover the skillet again, and simmer for 20 minutes or until no longer pink.
