Ingredients
1 | mango, skin peeled off, cut into halves |
350 g | salmon fillets |
1 tbsp | soy sauce |
1 tsp | fresh ginger, grated |
1 clove(s) | garlic, minced |
1 tbsp | lemon juice |
1 ½ tbsp | brown sugar |
1 tsp | cinnamon |
1 tbsp | sugar |
Instructions
Preheat oven to 180°C.Cut mango halves into long strips.
Purée 1/4 of the mango in a blender until smooth. Set the remaining 3/4 of the mango strips aside.
For the salmon sauce, combine the mango puree with the soy sauce, ginger, garlic, lemon juice and brown sugar in a small bowl. Mix well.
Place the salmon filets in a shallow baking pan lined with foil and aste the salmon fillets with the sauce. Pour remaining sauce around fillets.
Mix together remaining mango strips, cinnamon, and sugar. Make sure that all mango strips are evenly coated.
Place mango strips around the salmon filets.
Fold up the sides of foil and bake for 12-15 minutes.
