Ingredients
4 large | ripe mangoes, peeled and chopped into medium pieces |
4 tsp | ginger, finely sliced |
4 small | onions, finely chopped |
4 large | green chillies, chopped |
5 clove(s) | garlic, finely chopped |
½ tsp | curry powder |
200 g | brown sugar |
4 tbsp | fresh lemon juice |
½ tsp | turmeric, ground |
1 small | red chilli, finely chopped |
350 ml | white wine vinegar |
¼ tsp | salt |
Instructions
Place all ingredients in a large saucepan, stir and bring to the boil.Reduce the heat and simmer about 50 minutes, stirring frequently, until chutney has reduced, thickened and become jam-like.
Pour it into sterilised jars, seal well and turn the jars upside down. Let it cool for about 15 minutes and turn back.
Allow the chutney to cool completely and store cool and dark, e. g. refrigerated. The chutney stays fresh for about 12 months if unopened.
For the best result, let it stand and set for about 3 weeks before first use.
Serving suggestion:serve with steak, meatballs or with cheese. Good as a part of a marinade for chicken or pork ribs too.
