Flavor-packed hearty wraps with plenty of veggies and chicken. Amazing taste in every bite thanks to a spicy cilantro paste you make in the food processor.

Ingredients

Serves: 4
  • 4 cups packed cilantro leaves
  • 1 serrano chile, seeds removed
  • 1 clove garlic
  • 2 teaspoons grated fresh ginger
  • 6 tablespoons olive oil
  • 2 teaspoons cider vinegar
  • Salt and pepper
  • 1 pound chicken cutlets, cut into thin slices
  • 3 teaspoons garam masala
  • 2 yellow bell peppers, thinly sliced
  • 1 large onion, thinly sliced
  • 4 (10)-inch flour tortillas, warmed

Preparation method

Prep: 20 mins | Cook: 15 mins

1. Pulse cilantro, serrano chile, garlic, and ginger together in a food processor until smooth; add 2 tablespoons olive oil, vinegar, 1/2 teaspoon salt, and 1/2 teaspoon pepper and pulse again to combine. Set aside.
2. Pour 3 tablespoons olive oil into a large skillet and set over high heat. In a bowl, toss chicken with 2 teaspoons garam masala and salt and pepper to taste. Then cook the chicken in hot oil for about 3 minutes, until no longer pink inside. Transfer to cutting board.
3. Pour 1 tablespoon oil into the skillet. Add bell peppers, onion, 1 teaspoon garam masala, and salt and pepper to taste. Cook for about 6 minutes on medium heat, until vegetables become soft. Stir chicken back into the skillet and heat through.
4. Spread each tortilla with some of the cilantro puree and an equal portion of the cooked chicken and vegetables. Wrap up like a burrito and serve.
