Ingredients

500 g	chicken breast, cut in bite-sized pieces
3 tbsp	honey
3 tbsp	sambal ulek or chili paste
3 tbsp	vegetable oil
3 tbsp	soy sauce
3 tsp	brown sugar
4 clove(s)	garlic, crushed
½	red pepper, sliced
1	carrot, sliced
½	onion, sliced
1 handful	mushrooms, sliced
½	orange, juiced
1	dried chili, ground

Instructions

In a bowl, combine the honey, sambal ulek, oil, soy sauce, sugar, orange juice, chili and garlic. Mix well. Stir in the chicken pieces. Allow to steep for a couple of hours or overnight.

Preheat the oven to 180°C.

In a baking dish, mix together the marinated chicken, pepper, carrot, onion and mushrooms. Bake for 30 minutes.

Remove from the heat and serve with rice.
