Ingredients
Serves: 4- 2 cloves garlic, crushed
- 1-inch piece ginger root, peeled and chopped
- 2 bay leaves, crumbled
- 6 tablespoons olive oil
- 2 teaspoons ground coriander
- Juice of 2 lemons
- Salt and pepper
- 4 swordfish steaks
Preparation method
Prep: 10 mins | Cook: 10 mins | Extra time: 30 mins, marinating1. First, make a marinade: Pour oil into a large skillet and place over low heat. Cook garlic, ginger, and bay leaves in hot oil for about 2 minutes, add coriander, and cook for 1 more minute. Remove from heat. Stir in lemon juice and season with salt and pepper. Cool.
2. Place fish in a shallow nonreactive dish and pour the marinade over the steaks. Turn to coat, then cover with plastic wrap and refrigerate for 30 minutes to marinate.
3. Preheat grill to medium heat. Remove steaks from marinade and pour the marinade into a saucepan.
4. Grill steak about 4 minutes, then flip and continue to grill until cooked thoroughly. While fish is cooking, bring marinade in saucepan to a boil over medium heat, simmer for 2 minutes, then serve drizzled over the fish.
