A spicy grilled fish for a light summer meal. Red snapper starts off in a spicy bath with garlic and jalapeno, then gets a post-grilling shower of cilantro/caper and lime sauce.

Ingredients
Serves: 4- 1/3 cup lime juice
- 1 jalapeno pepper, seeded
- 3 garlic cloves, peeled
- 1 1/4 teaspoon fresh thyme leaves or 1/4 teaspoon dried thyme
- 1 teaspoon salt
- 1 teaspoon pepper
- 4 (6 ounce) red snapper fillets
- Optional Sauce:
- 3 tablespoons lime juice
- 3 tablespoons olive oil
- 2 tablespoons water
- 2 teaspoons red wine vinegar
- 1/2 cup cilantro leaves
- 1 shallot, peeled
- 1 tablespoon capers, drained
- 1 1/2 teaspoon chopped seeded jalapeno pepper
- 1 garlic clove, peeled and halved
- 1/4 teaspoon pepper
Preparation method
Prep: 20 mins | Cook: 10 mins | Extra time: 30 mins, marinating1. Pulse lime juice, jalapeno, garlic, thyme, salt, and pepper in a food processor until smooth. Place fish in a shallow pan, cover with the sauce, turn to coat, and refrigerate for 30 minutes to marinate. Drain.
2. Preheat grill to medium and lightly oil grate. Grill fish for about 4 minutes on each side, until cooked through.
3. To make the sauce, pulse all ingredients in a food processor until smooth. Drizzle over grilled fish to serve.
