These spicy chicken thighs bear a tasty surprise–a pistachio-fig stuffing that keeps them moist and delivers big flavor off the grill.

Ingredients
Serves: 4- 1/2 cup shelled pistachios, lightly toasted and crushed
- 1/2 cup dried figs, diced into very small pieces
- 1/2 cup red seedless grapes, chopped
- 2 cloves garlic, minced
- 1 teaspoon minced fresh ginger
- 1 tablespoon chopped fresh mint leaves
- 2 tablespoons fresh lemon juice
- 2 tablespoons extra-virgin olive oil
- 8 boneless, skinless chicken thighs
- North African Spice Rub:
- 2 teaspoons ground ginger
- 2 teaspoons ground cinnamon
- 2 teaspoons ground cumin
- 2 teaspoons ground coriander
- 1 teaspoon ground cayenne pepper
Preparation method
Prep: 20 mins | Cook: 35 mins1. Preheat grill to medium-high.
2. In a food processor, combine the first eight ingredients. Pulse a few times. Season with salt and pepper. Transfer to small bowl.
3. Combine ingredients for North African Spice Rub in a different small bowl. Mix well.
4. Put the chicken skin-side down and season the inside of the thighs with the spice rub, salt and pepper.
5. Place 1/8 of the pistachio stuffing mixture on top of each thigh. Fold the sides of the thighs over the filling to keep it from spilling out, and tie each thigh in 2 or 3 places with kitchen string. Rub outsides of thighs with spice rub, salt and pepper.
6. Grill thighs for about 12 minutes, turning occasionally. Then move the chicken to a cooler part of the grill and close the cover.
7. Continue cooking for another 20 to 25 minutes, or until completely cooked through.
8. To serve, remove the string from the stuffed chicken thighs.
