Ingredients
180 g | glass noodles |
5 tbsp | fresh lime juice |
4 tbsp | fish sauce, or more, to taste |
½ tbsp | sugar |
2 clove(s) | garlic, finely chopped |
2 stalk(s) | celery, trimmed and thinly sliced |
5 small | red hot Thai chili peppers |
40 g | carrot, corsely grated |
1 | onion, sliced |
20 | prawns, medium-large, deveined, shelled |
1 bunch(es) | coriander leaves, roughly chopped |
Instructions
In a pot of boiling water, cook the prawns for a minute or two, until they’re just cooked. Set the prawns aside to cool. Using the same boiling water, boil the glass noodles for about 5 – 8 minutes, or follow the instruction on the package. The noodles should be soft but still a little bit firm to the bite. Rinse well with cold water and set aside.In a mortar, put in chili, sugar, chopped garlic, lime juice, fish sauce and pound until chili and garlic are crushed and flavours blend into the liquid.
Put glass noodles in a large salad bowl, pour the chili mixture in the bowl and mix with the noodles. Season with more fish sauce if necessary. Add celery, carrot, prawns, onion, coriander and mix well.
Serve as a starter and enjoy!
Note:
Fish sauce can be substituted by soy sauce but of course the taste would turn out a bit different.
Glass noodles should not be confused with rice noodles. The former are made from starch such as mung bean starch and become transparent after cooking in water. The later are made from rice and the colour stays white after cooking in water.
