Ingredients

25 g	fresh ginger, grated
1	lime, juice
400 g	chicken breast fillet, cut into bite-sized pieces
2 tbsp	soy sauce
200 g	rice
	salt
1 sprig(s)	lemon grass
1	red hot chili pepper, seeded and chopped
1 clove(s)	garlic, chopped
3 tbsp	sesame oil
1	pineapple, peeled and cut into small pieces
60 g	macadamia nuts
½ bunch(es)	cilantro, chopped
2 tbsp	sunflower oil

Instructions

Place the chicken pieces into a bowl and add pineapple, ginger, chili, lime juice and soy sauce. Place into the fridge for an hour.

Cook the rice until done.

Mix the garlic with lemon grass and sesame oil. Toast the nuts in a dry pan.

In a wok heat the oil and stir-fry the pineapple and the meat until golden. Add the rice and the garlic mixture and stir-fry for a couple of minutes. Adjust the seasoning.

Serve sprinkled with cilantro and the nuts.
