Ingredients
25 g | fresh ginger, grated |
1 | lime, juice |
400 g | chicken breast fillet, cut into bite-sized pieces |
2 tbsp | soy sauce |
200 g | rice |
salt | |
1 sprig(s) | lemon grass |
1 | red hot chili pepper, seeded and chopped |
1 clove(s) | garlic, chopped |
3 tbsp | sesame oil |
1 | pineapple, peeled and cut into small pieces |
60 g | macadamia nuts |
½ bunch(es) | cilantro, chopped |
2 tbsp | sunflower oil |
Instructions
Place the chicken pieces into a bowl and add pineapple, ginger, chili, lime juice and soy sauce. Place into the fridge for an hour.Cook the rice until done.
Mix the garlic with lemon grass and sesame oil. Toast the nuts in a dry pan.
In a wok heat the oil and stir-fry the pineapple and the meat until golden. Add the rice and the garlic mixture and stir-fry for a couple of minutes. Adjust the seasoning.
Serve sprinkled with cilantro and the nuts.
