Ingredients

1 ¼ kg white potatoes
2 tbsp butter
2 tbsp grapeseed oil
1 medium onion, chopped
2 clove(s) garlic, crushed
2 ½  cm fresh root ginger, finely grated
1 tsp garam masala
1 tsp chilli powder
3 tbsp medium curry paste
1 tbsp tomato puree
500 g lean minced beef
1 tsp salt
175 g garden peas, defrosted if using frozen
150 ml vegetable stock
2 tbsp fresh coriander, chopped

Instructions

Boil the potatoes in some salted water until tender. drain, add the butter and mash until smooth. Set aside.

Heat the oil in a large non-stick pan, add onion, garlic and ginger and fry over a low heat for 5 minutes, stirring occasionally. add garam masala and chilli powder and fry, stirring, for 2 minutes.

Stir in curry paste and tomato purée, then beef and salt and mix well so beef is well coated in spices. Cook for 5 minutes, stirring occasionally.

Stir in vegetable stock, peas and coriander, mix well, then remove from heat, pour into pie dish and level out. Cover evenly with the mashed potato. Drag a fork over the top of mash from side to side to create ridges.

Place in a preheated oven on gas mark 5 or 210°C for electric and cook for 45 minutes. Serve as required.

Note:This is made with home-made medium curry paste (see recipe) and can be served either on its’ own or with boiled vegetables and gravy ( it will go!). The quantities quoted are to fit a 20 cm square x 5 cm deep pie dish.
