Ingredients
800 g | chicken pieces on the bone, e.g. thigh chops/cutlets |
1 ½ tbsp | olive oil |
220 g | chorizo, sliced |
250 g | red (spanish) onion, chopped |
280 g | red capsicum, chopped |
50 g | tomato paste |
5 clove(s) | garlic, chopped |
1 tsp | paprika, mild |
1 tsp | paprika, hot |
400 g | canned tomatoes, chopped |
150 ml | water |
1 tbsp | fresh thyme, chopped |
some | salt |
some | freshly ground black pepper |
210 g | canned corn kernels, drained |
Instructions
Preheat oven to 160ºC fan-forced.Heat oil in a large casserole/Dutch oven and brown the chicken pieces. Remove from the pot and keep warm in the preheated oven.
Stir-fry chorizo, onions and capsicum in the chicken juices for about 5 minutes. Add garlic and paste and fry for 1 minute.
Stir in paprika powder, tomatoes with juices and water. Bring to a short boil, reduce heat, season to taste and add thyme.
Return the chicken to the pot; they should be half covered, skin side up. Cover and bake in the oven for a total of 90 minutes. Remove lid after 60 minutes and bake for the last 30 minutes until the skin is crispy brown.
Add the corn, stir and serve e.g. with crushed potatoes and sour cream.
